The basic concept of biological pecorino cheese is: happy animals for a better cheese. All of our bio pecorino cheeses are indeed produced with the milk of sheeps kept outdoors and only fed with natural food, meaning not treated with herbicides, fertilizers or insecticides of chemical origin. And the protection goes on during the whole milk processing: all the possible ingredients added to the milk, for instance the truffle, are biological themselves and hundred percent natural.
The respect for the biological standard throughout the production chain is guaranteed by ICEA, the Italian Institute for the Ethical and Ambiental Certification.
