Pecorino di Rocca aged under black pepper

The compact white paste cheese is refined in our warehouse until right maturation. Consequently it is put under black pepper. The aroma and the flavour of the black pepper can be tasted, and the cheese turns to have a pronounced but dainty taste. When the maturing is fully completed, the rind appears sprinkled with pepper and it is sold wrapped in paper.

PRESERVATION METHODS

Store the shape in a cool and dry place. Once cut, store it in the refrigerator or in a cool and dry place wrapped with maize paper or with a linen cloth.
